I saw this herb in Giada de Laurentis' Pasta book and ever since I wanted to try it out, but didn't even think of buying it until I visited my sister over the Christmas holiday's and as soon as I saw this in her hamper, I drove right away to Target and bought this. Herbes de Provence is a mixture of dried herbs typically containing savory, fennel, basil, thyme, and lavender leaves and other herbs.
